Thai Coconut Tapioca Pudding

This menu is called “Sa Kool Ma Praw” in Thai which Sa Kool means Tapioca and Ma Praw means Coconut or it’s called Thai Coconut Tapioca pudding in English. As you know this tapioca pudding is Thai dessert and it serves in a mall portion after the main meal. Most of Thai menus are really spicy taste and as an authentic Thai food, we will serve sweet dessert after the main meal for tiny bit of dessert to cool down the spicy with sweetness. If this dessert bowl serving during summer, I would also add some crushed ice over the top of this pudding.

Homemade Thai Coconut Tapioca Pudding by Pitsuda’s Kitchen

You can change the corn to something else like sliced mango, avocado, peach, taro, or sweet potato will give you a different flavors. It could be mix and match with other fruits you prefer. To prepare this dessert is only taken about 20 minutes and it’s really easy! I prepare this sweet dessert all the time especially during summer time. My household love to have it in different flavors and prepare each flavor at a time.

Thai Coconut Tapioca Pudding Ingredients

  • 16 oz. can of Coconut Milk
  • 4 and 1/2 cups of Water
  • 2 cups of Tapioca
  • 3/4 cup of Sugar
  • 2 teaspoons of Salt
  • 1 Sweet Yellow Corn, boiled
  • 1 Coconut Meat

Thai Coconut Tapioca Pudding Preparation

  1. First will start cooking tapioca, turn on stove with medium heat with water and bring to boil.
  2. Added tapioca and stirred and make sure to keep stirring until the tapioca look all cooked.
  3. Added salt, sugar, and coconut milk, stirred well until everything look corporate. Then turn off stove and let it cool down for about 5 minutes.
  4. Cut the corn and boiled until cook, rinse out the water and place on the individual bowl.
  5. Shredded coconut meat by using the coconut shredder tool which can be found at Asian Market at the kitchen section. Shredded until done and place in a small bowl.
  6. Mixed tapioca, corn, and shredded coconut in a large mixing bowl, mixed well. Then place in a small airtight container as an individual serving with spoon.

*This dessert menu can be served with Thai Ice Tea or Thai Black Tea for brunch, tea time or even afternoon break!
