Thai Coconut Rice Custard, also known as ขนมถ้วย (Kha Nhom Thuay) in Thai. This Thai dessert is often found in the daily life of local Thai citizens from all levels of social classes since the ancient time. The word “Thuay” referring to a small ceramic cup that holds the dessert while being steamed. The dessert being named after the container that hold it, make its name literally means cups dessert.
The Thai Coconut Rice Custard made from rice flour, coconut milk and sugar. This dessert has two distinct layers; a flavorful green layer of Pandanus water and Palm sugar mixture at the bottom and a white layer of coconut cream on top. As a whole, the two layers contribute to a unique sweet and salty taste.
“I remembered, my late grandmother used to sell this dessert in a fresh market and I helped her prepare this Thai dessert sometimes when I was around 7 years old. Every time when I cook this dessert, it brings back my memories about my grandma and I missed her so much.”
Serves for 4 to 6
Ingredients will separate into green and white layers
Green Layer Ingredients
- 1/2 cup of Rice Flour
- 2 tablespoons of Tapioca Flour
- 1 cup of Water
- 1/4 cup of Coconut Milk
- 1/2 cup of Palm Sugar
- 1/4 cup of Pandanus Leave Water (Optional)
White Layer Ingredients
- 2 tablespoons of Rice Flour
- 1/2 teaspoon of Salt
- 1 cup of Coconut Milk
Preparation
- Mixed the green layer ingredients all together by hand until smooth, set aside.
- In a small bowl, mixed the white layer ingredients together until smooth, set aside.
- I use mini ceramic cups or sauce bowl that wide 2.5 inches, then put the green layer mixed ingredient for about 3/4 of the little cup and put in the steam pot for about 15 minutes.
- After the first around done take them out to rest for about 5 to 10 minutes before you put the white layer mixed ingredients over the top until the cup almost full. Steam for another 15 minutes.
- Let them cool completely before serve.
