Simple And Easy Rice Soup

This is really simple and east to prepare in just about 15 to 20 minutes. I usually prepare this menu when I don’t have much time to cook and I can use the left over rice from a day before for this rice soup or I prepare this menu when I am not feeling good and I would love to have something light and easy to digest. So, rice soup seem to be the best choice for me but it is not always for the menu when I get sick but it is also can be a meal that takes short to prepare.

Homemade Rice Soup by Pitsuda’s Kitchen

Simple, light meal, easy to prepare which I usually add some vegetables I have inside my refrigerator such as celery, carrot, or Bella mushroom if I have them. Ground pork, garlic, and left over rice. Garnish the soup with some cilantro from my backyard garden. If I have ginger I would add some in the soup or I can crack some egg and put in a pot and let it cook for about 2 minutes before turn off the stove. For the best flavor, I would use my homemade chicken broth if I have it handy, if I don’t have it I just use filtered water instead (spring water is fine as well).

Rice Soup Ingredients

  • 4 cups of Jasmine Rice
  • 6 cups of Chicken broth (Substitute options: water)
  • 1/2 cup of Celery, sliced
  • 1/2 cup of Carrot, small and thin sliced
  • 1/4 cups of Bella Mushroom, thin sliced (Optional if prefer)
  • 2 cloves of Garlic
  • 1/2 pound of Ground Pork
  • Salt and Ground Black Pepper to taste
  • 1/4 cups of Ginger, long thin sliced (Optional if prefer)
  • 4 large Eggs (Optional if prefer)
  • 1 hand fulled of Cilantro Leaves for Garnish

Rice Soup Preparation

  1. In a large pot, added chicken broth with high heat and bring to boiled.
  2. Added garlic cloves and ground pork, stirred well until all the ground pork cooked.
  3. Added some vegetables; celery, carrot, and mushroom, stirred well.
  4. Pinched some salt and pepper to taste, stirred until all mixed well.
  5. Added rice and stirred for about 3 to 5 minutes before cracked some eggs and stirred for another 2 to 3 minutes before turns off the stove.
  6. Put the soup in serving bowl right away with the eggs and garnished with cilantro.
  7. Serving this soup hot will taste the best!
