Shabu-Shabu

When we are thinking to have Shabu-Shabu but we do not want to go out. One day we decided to do home cook Shabu-Shabu at our home instead. We get up early in the next morning to go grocery shopping to get all ingredients for this menu. We found out that the most ingredients for this menu, we can get them at Asian grocery store for everything. At the same day we have this menu at that evening. It is more delicious when we cook and eat at home with our favorite movie.

Shabu-Shabu or しゃぶしゃぶ in Japaneses, it is a Japanese Nabemono hotpot dish of thinly sliced meat and vegetables boil in Dashi broth, and serving with Sesame Dipping Sauce. This menu have good combination flavor from Miso paste, vegetable and bone broth we use as our house style Shabu-Shabu.

Serve for 4

Ingredients for Dashi Broth:

  • 9 cups of Bone Broth, I use pork bone
  • 1 strip of Kombu Seaweed, about 3-4 inches
  • 10 Dried Shiitake Mushrooms
  • 5 tablespoons of White Miso Paste

Preparation

  1. In a deep soup pot, added water into the pot and bring to boil at high heat. When the water start to bubble, then reduce heat to medium and added the pork bone. Leave it boil for at least 30 minutes to 1 hour. After that took the bone out from the pot.
  2. In the same soup pot, added Kombu Seasweed, shiitake mushrooms and Miso paste. Let it simmer for 20 minutes and the Dashi Broth is ready for Shabu-Shabu.

Ingredients for Shabu-Shabu Dippers

  • 1 and 1/2 pounds of Rib Eye, Sirloin or Brisket Beef, sliced thinly into 1/8-inch-tick strips
  • 4 heads of Baby Bok Choy, ends trimmed and leaves separated
  • 1 heads of White Cabbage, ends trimmed and leaves separated
  • 1 package of Firm Tofu, approximately 16 ounces
  • 2 packages of Thin Vermicelli Noodle, soaked in filtered water for at least 15 minutes

Preparation

  1. Placed the meat into a serving plate
  2. Clean the vegetables and put on a big serving plate with cut 1 inch tofu and noodle. Organize the plate to make it looks good, I separate vegetable one side; tofu and noodle on another side of the plate.

Ingredients for Sesame Dipping Sauce

  • 4 tablespoons of Sesame Paste or Tahini
  • 2 tablespoons of Miso Paste
  • 2 teaspoons of Mirin
  • 2 teaspoons of Rice Wine Vinegar
  • 2 teaspoons of Sesame Oil
  • 1 clove of Garlic, grated or minced

Preparation

In a medium size mixing bowl, combine all ingredients together and use hand whisk to mixed the sauce. Pour into each sauce serving bowls.
