Peach Crumble

It a chilly day in Autumn season. Peach season just passed by but I didn’t have a chance to show you some peach recipe but this all year round desert menu, I will never get tired to make them and serve it to my family dinner dessert menu.

This peach crumble is our house favorite desserts, it soft peach at the bottom and crunchy on the top from almond slices and most natural sweet taste from the peach and we love to always serving with ice cream on top. I usually make less sweet flavor on the peach crumble if I am planing to serving with homemade coconut ice cream. I will cut every sugar amount out half from the recipe. However, if I am planing to not serving with ice cream, I will follow the recipe below to make the peach crumble taste perfect to serving by itself with some hot tea.

Menu Ingredients Serving for 6

Filling Ingredients

  • 3 and 1/2 pounds of ripe but firm Peaches; peeled, pitted and cut 3/4 inch-thick wedges
  • 1 tablespoon of squeezed Lemon Juice
  • 1/3 cup of Granulated Sugar
  • 1 and 1/4 teaspoons of Cornstarch
  • Pinch of Salt
  • Pinch of ground Cinnamon
  • Pinch of ground Nutmeg

Filling Preparation

  1. Adjust oven racks to lower-middle and upper-middle positions and preheat oven to 350 degrees.
  2. Gently toss peaches and sugar together in large mixing bowl and let sit for 30 minutes.
  3. Then added lemon juice, cornstarch, salt, cinnamon, and nutmeg together, mixed all well and set aside to let all flavor absorb into the peach while I am preparing the topping ingredients.

Topping Ingredients

  • 1 cup of All Purpose Flour
  • 1/4 cup of granulated Sugar
  • 1/4 cup of Brown Sugar
  • 1/8 teaspoon of Salt
  • 6 tablespoons of Cold Press Organic Coconut Oil or Salted Butter; melted
  • 2 teaspoons vanilla extract
  • 1 tablespoon of Water
  • 1/2 cup Sliced Almond; divided

Topping Preparation

  1. I usually mixing all dry ingredients first before I add wet ingredients in. This process, I start with flour, sugars, and salt and mixed well together in a small mixing bowl.
  2. Then added some wet ingredients; coconut oil, vanilla extract and water. Mixed until all topping look crumble then added half of sliced almond and mixed well.
  3. Transfer topping mixture to prepare sheet and bake on upper rack until lightly browned and firm, about 15 minutes

Preparation

  1. Sprinkle topping evenly over peaches and spread into even layer with spatula.
  2. Place baking pan on lower rack and increase oven temperature at 375 degrees. Bake until topping is well browned and juices are bubbling around edges, 20 to 30 minutes.
  3. Let cool for at least 30 to 45 minutes before serving with ice cream.

Cooking at home is all about my favorite flavor which I don’t like too sweet or I am trying to buy something new but it isn’t taste I would like to try or expect. I decided to make my own at my flavor and when I am trying something new recipe, I would just make it and let my family try it and give me some comment to make my recipe better and better when I am trying again. However, I always write it down how much portion in put it on this time and adjust it mix and match the recipes to always make it taste better and perfectly next time.
