Green Curry Fired Rice

I am a fan of spicy food, even though, I cannot eat super spicy but to enjoy some kind of food that I cannot skip the hot. The original of this meal create from Thai green curry soup which suppose to be mild spicy and taste sweet from the coconut milk and vegetable. However, I cook differently for this fired rice. 

Serves for 2 

Ingredients

  • 1/2 cup of Cooked rice
  • 1/4 cup of Ground turkey
  • 1/2 tablespoon of Vegetable oil
  • 1/2 clove of Garlic, crushed
  • 1 Medium Carrot
  • 1/4 cup of Green Bean, cut small cube
  • 1/4 cup of Fresh Basil Leaves
  • 1/2 tablespoon of Green Curry Paste (put less if you don’t like spicy)
  • 1/2 teaspoon of Sugar
  • 1/4 teaspoon of Fish Sauce or Sea Salt
  • 1 Cucumber, thinly sliced, for garnish

Preparation

  1. Cook the meat at medium to high heat with garlic and oil until golden brown. Then add the vegetable; carrots, beans, and basil leaves. 
  2. Add green curry paste and mix well, then add sugar and fish sauce.
  3. Add cooked rice into the pan and stir for about 2 minutes or until that all mix.
  4. Decorate place with slice of cucumbers, ready to serve.
