Crispy Crust Pumpkin Pie With Homemade Whipping Cream

Get busy inside my kitchen for me it is fun! This time I was preparing pumpkin pie that is my family member request to have it for our afternoon break dessert with Sweet Thai Ice Tea. Summer day is hot weather and we want to cool ourselves down with cold drink and dessert.

Homemade Pumpkin Pie by Pitsuda’s Kitchen

When I cook my own dessert like pumpkin pie, I know exactly what ingredients I put in it and how the taste I would love to have. So, generally my dessert taste just righted and there is nothing else I can ask for, not too much sweet but we are still enjoying some sweetness flavor of the pumpkin pie. My homemade whipped cream giving more sweetness flavor and went well with the pumpkin pie. Plus, we refreshing the afternoon heat with cold drink I prepare with this dessert like Thai Ice Tea.

Pumpkin pie has some spices and creamy flavors from the heavy cream, cinnamon, clove, and ginger spices. As well, the crust gave some creamy flavor from mascarpone cheese and crispy when baking all together with the pumpkin pie filling.

Menu Ingredients Serving for 8 Slices

Crust Ingredients

  • 1 and 1/4 cups of All Purpose Flour
  • 1 tablespoon of Granulated Sugar
  • 1/2 teaspoon of Salt
  • 1/2 cup of Chilled Butter
  • 2 tablespoons of Mascarpone Cheese
  • 1 tablespoon of Cold Water

Crust Preparation

  1. In a large mixing bowl, mixed the dry ingredients with flour, sugar, and salt and mixed well.
  2. Massaged dry ingredients with chilled butter until everything corporate. It will approximately take 15 minutes or until it get the thick texture.
  3. Added mascarpone cheese and water then keep massage the crust until it soften and can be able to roll on the counter top.
  4. Using roller, rolled until the crust thin then place on a pie baking pan and make it look good as a pie crust.
  5. Chill the pie crust in the refrigerator for at least 15 minutes to 30 minutes before filling with the pumpkin pie filling.

Pumpkin Pie Filling Ingredients

  • 2 cups of Pumpkin Purée
  • 3 Large Eggs
  • 1/2 cup of Brown Sugar (Substitute optional: coconut sugar or granulated sugar if you prefer or easy to find at grocery store)
  • 1/2 cup of Heavy Cream
  • 1/2 teaspoon of Salt
  • 1/2 teaspoon of Cinnamon Powder
  • 1/2 teaspoon of Clove Powder
  • 1/4 teaspoon of Ginger Powder

Pumpkin Pie Filling Preparation

  1. Preheat oven at temperature 375 Fahrenheit degrees.
  2. Cracked eggs and using hand mixer beat the eggs then added brown sugar, mixed well until everything corporate.
  3. Added dry ingredients; salt, cinnamon, clove, and ginger into the bowl and mixed well.
  4. Then added heavy cream and mixing by hand whisk until everything corporate.
  5. Poured the filling into the crust that I prepared earlier.
  6. Bake for 40 to 45 minutes.
  7. When it done, took out and let it cool down about 5 to 10 minutes before serving with homemade whipping cream.

*I prepare my own pumpkin purée by using a pie pumpkin that I can always find it at grocery stores around town. It is usually in season around fall season, I would find pie pumpkin more easily.

Pumpkin Purée Preparation

  1. Peeled off the pumpkin skin then cut into a chuck cube.
  2. Boiled in a large pot with filtered water for about 20 minutes or until the pumpkin soften.
  3. Rinsed all the left of water out and put the cooked pumpkin into a blender. Blended until all the pumpkin looked purée.
  4. If the pumpkin big I can use half for next day pumpkin pie and I will store the left of pumpkin purée in a freezer to keep the pumpkin purée fresh until I use it again.
  5. When need to use the pumpkin purée, take out from the freezer at least 2 to 3 hours before use. So, this way I let the pumpkin purée defrost itself before I use it.

Whipping Cream Ingredients

  • 1 cup of Heavy Whipping Cream
  • 1/4 cup of Powder Sugar
  • 1/2 teaspoon of Vanilla Extract (*Optional if you want to have vanilla flavor)

Whipping Cream Preparation

  1. In a medium mixing bowl, added heavy cream and using hand mixer, mixed for about 2 to 3 minutes.
  2. Added powder sugar 1/4 cup at a time and continue mixed until it all whipped.
  3. Put the whipping cream into a serving bowl.
