Ricotta Pancakes

This is my favorite breakfast that I have an ideas from my mother-in-law.  I love to decorate with colorful berries fruits like strawberries, raspberries, blueberries, or blackberries and so on. The pancake that soft, fluffy, and super delicious!

The main ingredients of this recipe are Ricotta cheese, milk, eggs and flour. I separated yolk and white egg to whisk until soft peak and this will help pancake soft and fluffy. 

Serve for 4

Ingredients

  • 1 cup of All Purpose Flour
  • 2 tablespoons of Sugar
  • 3 teaspoons of Baking Powder
  • 1/2 teaspoon of Cinnamon Powder
  • 1/4 teaspoon of Salt
  • 2 large Eggs (separate white and yolk egg)
  • 1 and 1/4 cups of Whole Milk
  • 1 cup of Ricotta Cheese
  • 1 to 2 tablespoons of Vegetable Oil or Butter (Optional)

Preparation

  1. Put all dry ingredients in a big bowl; flour, sugar, salt, baking and cinnamon powder. Mixed well. 
  2. Use hand whisk whisked white egg until fluffy and thick soft. Set aside.
  3. Put wet ingredients; yolk eggs, milk and Ricotta in the same bowl with the dry ingredients bowl.Then mixed until all corporate.
  4. Put fluffy whisked white egg at last and gently mixed by spatula.
  5. Use a non-stick fry pan with vegetable oil with medium heat. Then cook on a pan piece by piece for about 1 to 2 minutes each side or until looks golden brown.
  6. Serve with fruits and maple syrup.
